Bilbao’s surroundings have always been closely related to Coal mines. During the city’s golden years, it was also linked to the industrial world, and now we focus on a type of Tourism and Gastronomy that is deeply rooted in these Traditions and Heritage.

All our dishes and preparations are based on this essential element, combining tradition and timelessness to create a characteristic flavour. This is why we believe that Coal is timeless; it defines us as a Society and we use it to develop a Unique gastronomy.
